Blueberried Banana Bread (serves 6)

Calories 408/Protein 14g/Carbs 55g/Fat 10g (per serving)

Ingredients

  • 2 Jiffy Banana Muffin Dry Mix

  • 50g Vanilla Casein Protein (can use whey, but it’s not as good)

  • 100g Egg Whites

  • 50g Almond Milk

  • 1 tbsp. cinnamon

  • 60g Non-Sweetened Applesauce

  • 100g Non-fat Greek Yogurt

  • 1 cup Blueberries

  • 1 M to L Banana

  • 1 serving Sugar Free Syrup

    Optional

  • 1 serving Reduce Fat Peanut Butter (warmed up in the microwave. Do this last.)

Instructions

  1. Pre-heat oven to 350F

  2. Mix the dry stuff (muffin mix, protein)

  3. Mix the wet (all the other stuff)

  4. Pour into a greased/sprayed bread pan

  5. Bake 20-30 Minutes (new oven and I haven’t perfected times yet.)

  6. Top with leftover banana, more blueberries, syrup, and warmed peanut butter

  7. Or, Use the French toast recipe and make into French Toast.
