  • 6 Cinnamon Raisin English Muffins

  • 1 lb Lean Ground Turkey (93% or 99% lean)

  • 1.5 tsp Fennel Seeds (crushed)

  • 1 tsp Garlic Powder

  • 1/2 tsp Red Pepper Flakes

  • 1 tbsp Sugar-Free Maple Syrup

  • 4 large Whole Eggs

  • 1/2 cup Liquid Egg Whites

  • 1/2 cup Low-Fat Cottage Cheese

  • 1/4 cup Non-Fat Greek Yogurt

  • 2 tbsp Skim Milk

  • 6 slices American Cheese

  • 1/2 tsp Salt and 1/4 tsp Black Pepper

Instructions:

  1. Season the "Sausage": In a medium bowl, combine the ground turkey, crushed fennel, garlic powder, red pepper flakes, and maple syrup. Mix gently—don't overwork the meat or it gets tough! Form into 6 thin patties, making them slightly larger than the muffins to account for shrinkage.

  2. Sear the Patties: Heat a non-stick skillet over medium-high heat with a quick spray of oil. Cook the patties for 3–4 minutes per side until fully browned and cooked through. Set aside.

  3. Whisk the Protein-Egg Base: In a large bowl, whisk the eggs and egg whites. Stir in the cottage cheese, Greek yogurt, milk, salt, and pepper. For a smoother texture, you can pulse this mixture in a blender for 5 seconds to get rid of the cottage cheese "curds."

  4. Bake the Eggs: Pour the egg mixture into a greased $9 \times 13 \text{ inch}$ baking dish. Bake at 350°F for 15–20 minutes or until the eggs are set and no longer jiggly. Let them cool for 5 minutes, then cut into 6 even squares (or use a glass to cut circles that match the muffins).
