Chicken Fritters (makes 12 servings)

Ingredient List

  • 4.5 oz can of chicken breast (can use super shredded up chicken or use a food processor)

  • 75g prepared couscous (bread crumbs in a pinch)

  • 1 whole egg

  • 1/2 cup low fat mozzarella

  • 1 tsp of the following

    • garlic powder

    • onion powder

    • oregano

    • salt

    • black pepper

Instructions

  1. Mix all ingredients (except the cheese) into a bowl until homogenous

  2. Heat up a skillet/frying pan/griddle

  3. Use a disher to scoop 1/12 of the mix and place it on the cooking surface.

  4. Flatten it out and cook for 90 second

  5. Add a small amount of cheese to top and flip it

  6. Add a little more cheese to the top

  7. Allow the mix to cook until the cheese gets crispy

  8. Feel free to flip a couple of time to darken the cheese and make it crispy

  9. Serve the fritters with marinara, BBQ, ranch, or buffalo sauce
