High-Protein Gochujang Cauliflower Wings

Ingredient List

  • 1 cup Oat Flour (or all-purpose flour)
  • 1 scoop Unflavored Casein Protein Powder
  • 1 cup Unsweetened Almond Milk
  • 1 tsp Garlic Powder
  • 1 tsp Paprika
  • 1/2 tsp Salt and 1/4 tsp Pepper
  • Cooking spray

For the Gochujang-Yogurt Sauce

  • 1/4 cup Non-Fat Greek Yogurt
  • 2 tbsp Light Mayonnaise
  • 2 tbsp Gochujang (Korean Chili Paste)
  • 1 tsp Low Calorie Syrup or Honey (to balance the spice)
  • 1 tbsp Water (optional, for thinning the sauce)

Instructions

  1. Preheat the Air Fryer: Preheat your air fryer to 400°F (200°C). Lightly spray the basket with cooking spray.
  2. Mix the Dry Batter: In a large bowl, whisk together the oat flour, whey protein powder, garlic powder, paprika, salt, and pepper.
  3. Form the Batter: Slowly pour the almond milk into the dry ingredients while whisking until a thick, smooth batter is formed. The batter should coat the back of a spoon.
  4. Coat the Cauliflower: Add the cauliflower florets to the batter. Toss gently until every floret is evenly coated.
  5. Air Fry: Place the coated florets into the prepared air fryer basket in a single layer (work in batches if necessary—do not overcrowd). Air fry for 15-20 minutes, flipping halfway through, until the cauliflower is tender and the batter is crispy and golden brown.
  6. Prepare the Sauce: While the cauliflower cooks, mix all the sauce ingredients (Greek yogurt, light mayonnaise, gochujang, and syrup) in a small bowl until smooth. Add water if you prefer a thinner sauce for tossing.
  7. Toss and Serve: Once the cauliflower is finished, transfer the wings to a clean bowl. Pour the sauce over the wings and toss gently to coat. Serve immediately.
