French Bagel Casserole

Ingredient List

  1. 6 Bagels (honey apple, cinnamon raisin, or plain work great)

  2. 1 lb (16 oz) ground pork or turkey sausage

  3. 6 large whole eggs

    1. (For added protein) Up to 1 cup liquid egg whites (or about 8 large egg whites)

  4. 1 cup non-fat plain Greek yogurt

  5. 1 cup skim milk (or your favorite low-fat milk alternative)

  6. 2 scoops vanilla whey protein powder

  7. 3 tbsp maple syrup (for the sausage)

  8. 2 tsp cake batter extract (and/vanilla extract)

  9. 2 tsp ground cinnamon

  10. 1/2 tsp nutmeg

  11. Optional: 2 tbsp sweetener (sugar or fake sugar)Instructions

  1. Prep the sausage and bagels. Brown the sausage in a skillet over medium-high heat. Break it up with a spatula as it cooks. When it's fully cooked, add the maple syrup and cook for one more minute, just enough to let it caramelize slightly before removing it from the heat. Drain any excess grease. While it cools, chop the bagels into 1-inch cubes and toss them into a greased 9x13 inch casserole dish. Sprinkle the cooked sausage evenly over the bagel cubes.

  2. Make the protein custard. In a separate large bowl, whisk the whole eggs, liquid egg whites, Greek yogurt, almond milk, vanilla whey protein powder, cake batter extract, cinnamon, nutmeg, and optional sweetener. Whisk it good. You want this to be a smooth, pourable mixture.

  3. Soak time. Pour the custard over the sausage and bagel cubes in the casserole dish. Press everything down a little to make sure it's all drenched. For best results, cover it and let it sit in the fridge overnight. If you can't wait, at least let it sit for 15-30 minutes.

  4. Bake. Preheat your oven to 350°F. Bake for 50-60 minutes, or until the top is golden and the center is set. A knife inserted into the center should come out clean.

  5. Serve it up. I like to top mine with a few fresh berries or a little more maple syrup. Slice it into six equal pieces and serve.

  1. It’s a strange recipe, I know. But once you try it, you’ll get why it’s my new favorite. It’s got a great mix of sweet and savory and it’ll keep you full all morning long.
