Farm Frittata

Ingredient List

  • 1 large baked potato

  • 6 large Eggs

  • 1 can (12.5 oz) of canned chicken, drained

  • 1/2 cup diced green pepper

  • 1/2 cup diced onion

  • 1/2 cup whipped cottage cheese

  • 2 tbsp of a low-calorie wing sauce

  • 1/2 cup shredded cheese (mozzarella or cheddar)

  • Cooking spray, salt, and pepper

Instructions

  1. Prepare the Potato Base: Preheat your oven to 375°F (190°C). Spray a springform pan with cooking spray. Slice the baked potato into 1-inch discs and press them into the bottom of the pan to form a crust. Season with salt and pepper.

    Make the Filling: In a large bowl, whisk the 6 eggs until smooth. Stir in the drained canned chicken, diced green pepper, and onion. Gently fold in the whipped cottage cheese and wing sauce until combined.

    Assemble the Frittata: Pour the egg mixture over the potato base in the springform pan. Sprinkle the shredded cheese evenly over the top.

    Bake and Serve: Place in the preheated oven and bake for 30-40 minutes, or until the frittata is set and golden brown on top. Let it cool slightly before slicing.
